Hexanal, also known as Aldehyde C-6 or caproic aldehyde, appears as a colorless clear liquid. It carries distinct green, grassy, fatty and fresh apple aroma, typical of freshly cut plant and unripe fruit. This compound naturally exists in apple, strawberry, tomato and many fresh vegetables.
It dissolves freely in ethanol, flavor oils and common flavor solvents, while showing limited solubility in water. It blends smoothly with other green aldehydes, fruit esters and sulfur raw materials to build lifelike fresh top notes. Flavorists often use it to boost the bright, natural green profile of fruit and vegetable flavors.
